Hawaiian Aka Ebi Sweet Shrimp

Aka Ebi is a crimson-red prawn found deep in the northern Pacific Ocean, fished off the coasts of Hawaii. Though rare to spot and difficult to catch, this species is revered for its exceptional sweetness and perfectly firm texture. Ours is sashimi-grade, and among our best options for raw preparations, though its exceptional flavor and mouthfeel will still shine if just lightly grilled.
